Generous, Moist, & Delicious - Deb Perelman's Mom's Apple Cake

I'm trying to avoid, as much as reasonably possible, putting manufactured, commercial baked goods into my kids' lunches.  This has me testing a lot of recipes and baking a lot.  I find quick breads and pound cakes good options because the kids love them, they aren't necessarily super high in sugar, and my kids need the calories (I know, great problem to have).  I came across this one from Deb Perelman's Smitten Kitchen Blog as a  repost somewhere and thought I'd try it - the apples looked so tasty on top.  It's a good thing I don't mind getting out for a run a few times a week, because not only did the kids love it, so did I! My fast & easy Halloween baking

We're a few days away from the public school Halloween celebration. Now that I spend everyday in the hood, and I talk about cooking and baking all day, store bought holiday baking just feels wrong... for me (no judgments!).  That said, I don't have a ton of time and I have to watch the sugar intake / substance bit - I like their teachers, I know what happens to my kids on candy. On all fronts (so far), nothing is better than my Cocoa Carrot Muffins, who happen to masquerade as chocolate cupcakes.  Their fluffy dark 'chocolateliness' looks and tastes decadent, but the sugar is ok and the veg content is great.  I've also switched the AP for whole wheat...
