This Summer, join Cookery for a trip around the World for a culinary adventure. Each week, Teens will explore the food and flavours in globally-inspired classes and make dinner for their family. Today's class might be on a Thursday but we're having tacos anyways! Mexico inspires this class with Chef Jessica Roberts. Your Teen will cook in real-time Quinoa Black Bean Tacos with a Corn-Mango Salsa, Lime Crema and Avocado. A gooey Chocolate Tres Leche Cake to end the meal will sure to please!

What you will need

Ingredients (serves 4):  

  • 1 large red onion
  • 3 cloves garlic
  • 6 limes
  • 2 ripe avocados
  • 1 ripe mango
  • Small bunch fresh cilantro
  • 2 cups frozen corn
  • 1/2 red pepper
  • 1 ½ cups packed light brown sugar
  • 1 ¼ cups flour
  • 2/3 cup unsweetened cocoa powder
  • 1 ½ tsp baking soda
  • ¾ tsp baking powder
  • 1/2 tsp cinnamon
  • 2 1/4 tsp chili powder
  • 2 1/4 tsp ground cumin
  • 2 1/4 tsp sweet or smoked paprika
  • ½ tsp rum extract (or 1 tbsp rum)
  • ½ tsp vanilla extract
  • 3 tbsp tomato paste
  • 1/2 cup vegetable oil
  • 1 1/2 cups quinoa
  • 3 cups vegetable/chicken stock
  • 3/4 cup full fat coconut milk (from can)
  • 1 can (300ml) sweetened condensed milk
  • 3/4 cup strong coffee (make ahead and reserve or buy a cup from a local coffee shop!)
  • 2 cans (540 ml each) black beans, rinsed and drained
  • 3-5 pickled jalapeno slices or 1 fresh jalapeno
  • Small flour tortillas (3-4 per person- if big eaters, buy more. Lots of taco filling!)
  • 1 1/2 cups sour cream
  • 3/4 cup buttermilk
  • 3/4 cup whipping cream
  • 2 eggs
  • Salt
  • Pepper

 Equipment:

  • Cutting board
  • Chef knife
  • Paring knife or vegetable peeler (for peeling mango)
  • Large skillet with lid OR large saucepan with lid
  • 8 or 9” square/round cake pan (with sides at least 2 1/2” tall)
  • Large rimmed (or curved up sides) serving plate/platter (for serving cake-essential)

  • Strainer (for draining black beans)
