Missing date night at your favourite restaurant patio? Learn to make flavourful food and dine al fresco in your very own backyard, deck or patio.  Join Chef Joyce Singh in this real-time class hosted on Zoom, to prep and cook a meal with your loved one while spending some quality time together over a glass of wine or two. Together you'll make Garlic and Thyme Poached Salmon Nicoise with Chunky Caper Vinaigrette and Crispy Potatoes; Herbed Olive Focaccia; and finish with Chilled Melon with Mojito syrup.

Zoom is a conferencing app that we will be using to host this online cookery class.  You can download the app on your phone/tablet or go to zoom.us on your computer and join in, it's free. 

What you will need:

Ingredients (serves 4)

  • 1 1/4 lb skinless, boneless Salmon
  • 6 eggs
  • 1/2 lb green beans
  • 1 lb new potatoes
  • 1 clamshell cherry tomatoes
  • 2 cups extra virgin olive oil
  • 1 bunch thyme
  • 1 bunch mint
  • 1 head garlic
  • 4 lemons
  • 4 limes
  • 1 ripe honeydew or cantaloupe Melon
  • 1/2 cup Rum
  • 1/4 cup capers in brine
  • 3/4 cup black or green olives, pitted
  • 4 cups all purpose flour
  • 2 packets instant yeast
  • 2 cups white sugar
  • 1/2 cup kosher salt
  • 1 tbsp Dijon mustard
  • Salt
  • Pepper
  • 1 shallots (optional)
  • 6-10 fillets Anchovies in oil (optional)
  • 4 cups ice (optional)

Equipment:

  • Chef Knife or a good kitchen knife (essential)
  • Cutting Board (essential)
  • Measuring cups and spoons (essential)
  • Liquid measuring cup (essential)
  • Large pot for cooking potatoes and beans
  • Small pot for making syrup
  • Medium pot for poaching fish
  • Large saute pan or fry pan for potatoes
  • 2 small mixing bowls  
  • 2 large mixing bowls, for melon and focaccia dough
  • Sheet pan or baking tray, 13x18 or similar
  • Baking trays or large plates to hold prepared vegetables
  • Clean towel to cover focaccia
  • Whisk
  • Citrus reamer or fork
  • Tongs
  • Rubber spatula/wooden spoon
  • Wire strainer
