This Summer, Chef Jessica wants to take your Budding Chef on culinary tour around the World. Each week, your tween/teen will learn in real-time how to make a dinner for your family with globally-inspired flavours. Seven new menus created to teach new skills and inspire confidence in the kitchen. 

Opa! The flavours of Greece are highlighted in tonight's menu taught by Chef Jessica. Spanakopita Turkey Meatballs with Hummus and Tzatziki and a Chickpea Salad with Cucumbers, Sun-dried Tomatoes and Cumin Seeds is a fresh, Summer meal!

What you will need:

Ingredients (serves 4):

  • 454 grams ground turkey
  • 1 cup Greek yogurt
  • 3/4 cup crumbled feta cheese
  • 1 egg
  • 2 English cucumbers
  • 1 bunch fresh parsley
  • Small bunch dill
  • Few springs fresh mint (need 2 tbsp chopped)
  • 2 green onions
  • 3 lemons
  • 1 head + 4 cloves garlic
  • 225 grams frozen chopped spinach
  • 2/3 cup olive oil
  • 1/4 cup tahini
  • 1 tablespoon cumin seeds
  • 3- 540 ml cans chickpeas
  • 1/3 cup oil-packed sun-dried tomatoes
  • 3/4 tsp dried crushed red pepper
  • Salt
  • Freshly ground pepper

Recipes, and Zoom links will be forwarded to you the day before along with any minor prep that needs to be done before the start of class (i.e. washing produce, grating cheese)

To ensure that the class runs smoothly, please do the following:

  • Have ingredients and equipment set out ready to cook; have items requiring prep in advance of class completed.
  • Log into Zoom 10 minutes prior to start time so we can start on time.
  • Have your laptop, phone or tablet charged and set up close to your work station.
  • Be ready to have fun!
