This Summer, join Cookery for a trip around the World for a culinary adventure. Each week, Teens will explore the food and flavours in globally-inspired classes and make dinner for their family. Our 5th class in our Summer Teen series takes us to the island of Jamaica. Join Chef Jessica Roberts as she teaches your Teen in real-time to make Jamaican Beef Patties paired with a colourful Caribbean Coleslaw. We'll round things out with a Pineapple Upside Down Cake. (***Ground chicken/turkey or veggie ground round can be substituted for the beef).

Ingredient (serves 4):

  • 1 lb ground beef (ground chicken/turkey or veggie ground round can be substituted)
  • 3/4 cup unsalted butter
  • 3/4 cup milk
  • 2 eggs
  • 1 small cabbage (green, red, Savoy or Napa)
  • 1 large ripe mango
  • 2 medium carrots
  • 3 green onions
  • Handful fresh parsley
  • 1 onion
  • 2 cloves garlic
  • 1 jalapeno
  • 2 cans pineapple rings packed in juice (398 ml each)
  • 9 Maraschino cherries
  • 4 1/2 cups flour
  • 1 cup packed brown sugar
  • 1 cup sugar
  • 5 tsp baking powder
  • 2 1/2 tsp curry powder
  • 1/2 tsp turmeric
  • 3/4 tsp dried thyme
  • Pinch cayenne pepper
  • White bread (2 slices/small rolls- to make fresh bread crumbs)
  • 1 cup + 3 tbsp shortening
  • 1 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp red wine vinegar
  • 3 tbsp olive oil
  • 1 tsp vanilla
  • 1 tsp Caribbean hot sauce (or favourite hot sauce)
  • 1/2 cup sliced almonds (optional)
  • Salt
  • Pepper
