All-Clad Copper Core® 2 qt. Sauce Pan with Lid

$349.00

All-Clad has been making bonded stainless steel cookware in Canonsburg — just outside Pittsburgh, Pennsylvania — since 1971.

The brand is famous for pioneering fully-clad cookware, hence the name All-Clad.

Innovative bonded construction combines an interior core layer of thick-gauge copper that attracts heat quickly. This copper core is sandwiched by aluminum (that heats quickly) and finally,  durable stainless steel that ensures even heat distribution for consistent results across the entire cooking surface, all the way to the rim.

Dimensions: 6.1" diam.(15.5cm), 7.5" high (19cm), capacity: 1.9 L

Features:

  • Materials: 18/10 stainless steel, copper, heavy gauge aluminum
  • Riveted stainless handle will never loosen
  • Compatible for all cooktops including induction; oven broiler safe
  • Flared rim facilitates precise, drip-free pouring
  • Dishwasher safe, but hand washing recommended to preserve beauty
  • Lifetime warranty
  • Made in USA

Why we love it: Copper Core saucepans are perfect for making all sauces and soups, but especially white sauces, reheating starchy purees (carrot, celery root) etc that would stick and scorch in anything else. Pastry creams, lemon curd and buttery-emulsions like hollandaise gets the slow and steady heat that gives them their rich silkiness. Aside from these specialty functionalities, you still get the useful size and depth for more basic tasks like cooking pasta, grains, boiling eggs, poaching chicken or building smaller quantities of a stew or braise (perfect for 1 or 2 people)
