Easter Leftovers!
If you hosted the BIG Easter meal this past weekend, you may have a bunch of delicious leftovers in your fridge. This week's recipe is here to help you re-imagine what to do with all that leftover ham (or turkey or lamb!)
It's a Ham Banh Mi Sandwich! With a little bit of prep, enjoy this Vietnamese favourite for a low-key dinner or great-tasting lunch.
With simple quick-pickled carrots & daikon (get out your mandoline to julienne with ease), a good crusty roll, and some pantry staples, this sandwich comes together quickly & is a super refreshing use of leftovers.
Try it with whatever meat you roasted for Easter dinner, or do quick marinated & pan-fried tofu for a vegetarian version. A little salad on the side, and dinner is complete.
