Levain d’Alison PÉTRI

I received when it was at peak, so I could dehydrate some if I messed up. I made wonderful breads and focaccia with it. Thanks!

It would be great to receive some instructions when received or how to maintain it. I had to look that up online but I was a little lost at first.

I have made a loaf of bread and a focaccio so far and I really liked the activity in the initial sourdough. However I have noticed a decline in the activity. Here are a few of my thoughts for your consideration.

I would have really like receiving instructions on how to continue to feed it to maintain the level of yeast activity that I initially had (Instructions for Fridge & no fridge version)----I have googled them & I also have bread books----- but I am not sure if I am doing it right? I keep mine in the fridge for the week and take it out on Friday to feed it over the w/e and then put it back in the fridge. I have read a few different sources and I am still not really certain about the BEST time to take it out of the fridge? When & how often to feed? When to use it? When to return the jar with the fed sourdough back to the fridge? As I have noticed that mine grows a bit in the fridge & then deflates?????

Other thing I would suggest is using a straight edge mason jar as it makes it easier to remove & feed.

Overall having alot of fun with it & praying I can keep it bubbling! If not I will be back to purchase more.
Thank you.

Excellent starter - have made many delicious breads. Would recommend!

Thx for you help .

The starter has been easy to maintain and has already yielded delicious bread. I would absolutely buy again if needed.
