2018 Cooking Classes 

Welcome winter! Now that the cold has settled in it's time to think about comfort and warmth. Cookery has you covered. Our calendar is chock full of great offerings to build your repertoire, impress your guests and create new traditions in the kitchen. We are pleased to offer a range of classes at our Roncesvalles location for all age groups and skill levels with talented teaching chefs who will help you build your culinary repertoire, sharpen your knife skills, and guide you to entertain like a pro. Travel to India, have dinner in ItalyFrance or Morocco; learn an artisinal skill such as Handmade Pasta or upgrade your culinary game with Knife Skills. 

Our teaching staff is growing and we are thrilled to welcome Pastry Chef Nancy Burkes to Cookery! Another date for Nancy's sold-out class Cookery 101 Pie-Making With Chef Nancy Burkes has been added

We are also excited to announce that Chef Dara Sutin will be joining our team to share her expertise and passion for great food. 

Cookery provides hands-on experience with recipes that you can reproduce at home using locally sourced ingredients in an atmosphere where you can make new friends. Add wines to match and you have a great night out!

For Kids we offer an 8 week After School Program for 8 to 12 year-olds (now booking for April to June 2018) as well as a series of PA Day Workshops featuring  a Handmade Pasta Day in January and a Lunar New Year Celebration in February 2018!

Cookery's Boutique, Cooking Studio and Chefs are available for private classes from 6  to 10 participants. The retail space can be made available for a stand-up event for up to 30 people. We are licenced by the AGCO. Birthdays, Bridal Groups, Workplace Team Building, and Family Gatherings come with custom-designed menus, paired wines and discounted private shopping!

  • Seasonal Sensations: Cooking classes that will prepare you for the seasonal festivities to come; adding variety & excitement to your traditional celebrations.
  • Global Getaways: Adventurous dishes inspired by global cuisine made with local ingredients - featuring Italy, France, Korea, and India. 

Cancellation Policy: We are happy to move your booking to another class of your choosing or provide a store credit if notice of cancellation is provided more than 72 hours prior to the start of the class.

COOKERY 101: Knife Skills

Tuesdays:  March 20th, Or April 24th, 2018, 7pm to 9pm           Hands-On, $89. Book Now!

Sharpen your knife skills with Chef Sasha Gaponovich in our most popular class. Learn what the hardest working tool in your kitchen can do. You will practice the correct grip, how to slice, julienne, dice, and chifonnade with expert guidance and state-of-the-art equipment. Now that it's cold outside we will be making Crostini With Caponata; Roasted Root Vegetables; Farro With Shallots, Goat Cheese & Walnuts; Apple Strudel With Cinnamon Chantilly Cream. Join us for an evening of skill and confidence-building with a delicious dinner as well!

We continue to have 'teaching status' from our knife partners for this class. All participants qualify for student pricing on a student set of knives - whether it be Shun, Wusthof, or Global - which includes 3 knives - typically a 8" Cook's knife, a 6" Utility, and a 3.5" pairing knife (details in-store).  Special Student price, including Knife Skills class - $299-399 (details in-store).  Class only - $89 

  

COOKERY 101: Handmade Pasta    Book Now!

Fridays: February 23rd, Or March 9th, Or Saturday, March 17th, Or Friday, April 20th

7 - 9:30 pm, Hands-On 

Join us for artisinal pasta-making with Chef Janet Armstrong. Not only is is easy to learn it's also delicious and entertaining. Together you will make a cold-weather pasta menu featuring house favourites Lobster Ravioli & Cacio E Pepe!  Add in a Winter Greens Salad With Lemony Vinaigrette and your meal is complete. This hands-on experience will  increase your culinary knowledge and give you confidence in the kitchen! Our Spring Menu is currently under construction and will be revealed shortly. Look out for some great fresh new flavours!

    

COOKERY 101: Cast Iron Cooking

Tuesday, March 27th, 2018, 7 to 9 pm, Hands-On, Book Now!

Cast Iron cooking is having a renaissance & Chef Paula Bambrick is here to guide you. With a menu designed to build your confidence and skill you will use a use a combination of traditional and enameled cast iron to make Skillet Mac & Cheese, Herbed Roast Chicken, and Banana Bread Wedges. Equipment will include the Lodge wedge pan and the Le Creuset 6.5 Litre Oval French Oven.

Famous for its Bouchon style brasseries, Lyon has been unofficially named the capitol of French Gastronomy, and what better guide than well-travelled Chef Dara Sutin. Chef Dara brings considerable experience and expertise to her new role at Cookery and we are delighted to have her in our teaching faculty! In this evening of classics you will make Crispy Braised Pork Belly with Lentils; Lyonnaise Potatoes; Salad With Sausage & Walnuts, and for dessert Ile Flotant With Crème Anglaise. Together you will make Eggplant Caponata With Fresh Ricotta; Pasta Con Le Sarde; Roast Peppers With Tomato; Pan Seared Branzino With Galicky Greens, and Ricciarelli, Sicilian almond and egg-white cookies for dessert. This Macarons class for total beginners will walk you through the critical need-to-knows and get you over your fears of trying them at home. Practice important techniques for macaron success: batter basics, macaronnage & beginner piping. Spend the evening with Cookery’s founder, Alison Fletcher, as she shares the trials and tribulations of her own ‘Macaron Journey’. Not only will you taste what you make, but you'll also go home with a delicious selection of macarons.

COOKERY 101: 8 Week After School Program For 8 To 12 Year-Olds

Mondays, April  16th to June 11th, 2018, 3:45 to 5:15 pm, $395., Book Now!

Chef Janet  will guide junior cooks through a different skill and recipe each week including knife handling, stove-top safety, fresh pasta, yeast doughs, and many other kitchen essentials. Kids will learn multicultural cooking and classic techniques that they can reproduce at home while having fun and meeting new friends. The after-school snack has never been this delicious!
