The Best Lasagna Soup

This is a fabulous hearty recipe for this cold February week - only made better with the right kitchen essentials.

Ingredients:

  • 1 lb extra-lean ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tsp Italian seasoning (or 1 tsp each oregano and basil)
  • pinch chili / red pepper flakes
  • 1 tsp kosher salt
  • 1/2 tsp groud pepper
  • 2 1/2 cups crushed tomatoes or passatta
  • 4 cups beef broth
  • 2 cups dried mafalda pasta, broken lasagna noodles, or rotini
  • 1/2 cup ricotta cheese (garnish, optional)
  • 1/2 cup grated mozzarella cheese
  • Fresh parsley or basil (garnish, optional)

Method:

  1. Saute ground beef in a large heavy-bottomed pot over medium heat until browned, about 5 minutes.
  2. Add onions and garlic, sauteeing another 2-3 minutes until fragrant.
  3. Add remaining ingredients except for cheeses and fresh herbs, stirring to combine then bringing to a boil.
  4. Place lid on pot and simmer for 20 minutes until pasta is cooked through.
  5. Serve soup in large bowls, sprinkling mozzarella cheese overtop and topping with a dollop of ricotta.
  6. Garnish with fresh herbs if desired, serve and enjoy!
