Alison's BBQ Ribs

Alison's BBQ Ribs

Yield: 4-6 servings

Ingredients

2 kg pork ribs

3-4 tablespoons of your favourite rib rub

1 tbsp salt (if your rub does not contain salt)

2-3 cups of your favourite BBQ sauce, homemade or bottled


Directions:

  1. Preheat oven to 250 F. Remove membrane from back of ribs and cut into 4 rib segments.

  2. Rub ribs generously with spice rub and salt, and wrap in aluminum foil, seam side up. Place on a baking sheet.

  3. Cook in oven for 3 hours. Separate fat from the juices that accumulated while cooking and mix the juice in with your BBQ sauce.

  4. Brush ribs generously with BBQ sauce and finish on the grill to caramelize BBQ sauce, about 5 minutes per side, basting with more sauce if desired

     

NOTE: Alison prefers back ribs, to side ribs. Stock up when on sale and freeze until needed.

 

Côtes levées au barbecue d’Alison

Rendement : 4-6 portions

Ingrédients


2 kg de côtes de porc

3-4 c. à soupe de votre épice à frotter préférée pour les côtes levées

1 cuillère à soupe de sel (si votre épice à frotter ne contient pas de sel)

2 à 3 tasses de votre sauce barbecue préférée, maison ou en bouteille


Préparation :

  1. Préchauffer le four à 250 F. Retirer la membrane de l’arrière des côtes et couper en quatre segments de côtes.

  2. Frotter généreusement les côtes avec l’épice à frotter et le sel et les envelopper dans une feuille d’aluminium, les bords vers le haut. Placer sur une plaque à pâtisserie.

  3. Cuire au four pendant 3 h. Séparer la graisse des jus qui se sont accumulés pendant la cuisson et mélanger le jus avec votre sauce barbecue.

  4. Badigeonner généreusement les côtes de sauce barbecue et terminer sur le gril pour caraméliser la sauce barbecue, environ 5 minutes de chaque côté, en arrosant avec plus de sauce si vous le souhaitez

REMARQUE : Alison préfère les côtes levées de dos aux côtes levées de flanc. Faites des réserves lorsqu’elles sont en vente et congelez-les jusqu’à ce que vous en ayez besoin.
