Fresh Fruit with Savory Sprinkles

Fresh Fruit with Savory Sprinkles

Yield: 4 servings

Ingredients


1 1/2 lbs (680 grams) crunchy and/or fleshy fruit (melons, Asian pears, apples, oranges, pineapple or mango)

1 sheet toasted nori

1 tablespoon toasted sesame seeds

2 teaspoons mild chile flakes (such as Aleppo) or 1 tsp red pepper flakes

1/2 lemon

1 teaspoon flaky sea salt


Directions

  1. Cut fruit into 1/2” wide wedges, rounds or however deemed fit for the fruit. Side aside.

  2. Tear nori into small pieces. Pulse in a clean spice mill or blender until finely ground. Pour into a small bowl and mix with sesame seeds and chile flakes.

  3. Using a microplane or zester, zest the half lemon and add to nori mixture. Combine with fingers so it doesn't clump. Stir in the salt.

  4. Squeeze the lemon over the fruit, catching and discarding any seeds. Sprinkle the nori mixture over the fruit and serve.

Fruits frais avec garniture salée

Rendement : 4 portions

Ingrédients


680 g (1 1/2 lb) de fruits croquants et/ou charnus (melons, poires asiatiques, pommes, oranges, ananas ou mangue)

1 feuille de nori grillé

1 cuillère à soupe de graines de sésame grillées

2 cuillères à thé de flocons de piment doux (comme Alep) ou 1 c. à thé de flocons de piment rouge

1/2 citron

1 cuillère à thé de sel de mer en flocons


Préparation

  1. Couper les fruits en quartiers de 1/2 po de large, en rondelles ou en tout autre forme appropriée pour le fruit. Mettre de côté.

  2. Déchirer le nori en petits morceaux. Placez dans un moulin à épices propre ou un mélangeur jusqu’à ce que ce soit finement broyé. Verser dans un petit bol et mélanger avec les graines de sésame et les flocons de piment.

  3. À l’aide d’une micro-râpe ou d’un zesteur, zester le demi-citron et ajouter au mélange de nori. Combinez-le avec les doigts pour que le mélange ne s’agglutine pas. Incorporer le sel.

  4. Presser le citron sur les fruits, attrapant et jetant les graines. Saupoudrer le mélange de nori sur les fruits et servir.
