Looking for a modern twist on the classic Pimm’s Cup? The "Heart-Shaped Box" is a heady and delightful variation inspired by a Nirvana song! This Valentine's Day-hued drink combines the fruity Pimm’s No. 1 with sweet raspberries, zesty lemongrass, a splash of gin, and a refreshing twist of lime
INGREDIENTS:
1 Handful Raspberries
2 Cucumber Slices
1½ Oz Pimm’s No. 1
½ Gin
1⁄4 Oz Lime Juice
¼ Oz Lemongrass Syrup
Bitter Lemon Soda (preferably Fever Tree), to top
GARNISH:
Raspberries on a bamboo skewer
DIRECTIONS:
In a mixing tin, muddle raspberries with cucumber slices. Add Pimm’s, gin, lime juice, and
lemongrass syrup. Shake, then double strain into a tall Collins glass. Top with lemon soda.
Garnish with raspberries on a bamboo skewer.
Note: To make lemongrass syrup, combine 1 part water, 1 part granulated sugar, and 4
lemongrass stalks in a saucepan over medium heat. Bring to a boil and remove from heat. Let
cool to room temperature, then strain out lemongrass. Use or transfer to an airtight jar. Syrup
will keep in the refrigerator for 1 month.
