Aji Verde for Summer Long Weekends
The first long weekend of the 'summer' is right around the corner. Whether you are staying in town or heading further a field, we are here to help you be ready!
With sunny skies in the forecast, the BBQ will be busy! Whatever you are putting on the 'Q, do not miss this amazing sauce for all things grilled. Meat, fish, vegetables, they will all become spectacular with a dollop of Aji Verde. And it's super flexible, try the options and find your favourite!
Ingredients:
- 1 cup mayonnaise - options: greek yogurt, or sour cream
- 1 cup tightly packed fresh cilantro
- 2-3 green onions, root end removed
- 1 seeded jalapeño pepper - options: 1 seeded serrano pepper, or both!
- 2 garlic cloves - options: 1-2 more depending on how much you love garlic
- ¼ cup queso fresco - options: feta, parmesan
- Juice of 1 lime, about 2 tablespoons
- 1 tablespoon huacatay, or 5-6 mint leaves
- 1 tablespoon aji Amarillo paste, optional
- coarse salt to taste
Method:

Add everything to a blender, food processor, or hand blender.

Blend until smooth.

Adjust any seasonings with salt

Store or serve.
