Zucchini Ribbon Salad
Short Description:
A fresh and vibrant summer salad featuring delicate zucchini ribbons, zesty lime dressing, creamy queso fresco, and crunchy toasted pepitas. Light, refreshing, and perfect for warm-weather entertaining.
Ingredients:
- 1½ lbs zucchini or summer squash
- 2 tbsp extra virgin olive oil
- ½ tsp grated lime zest
- 1 tbsp fresh lime juice
- 1 garlic clove, minced
- ¾ tsp salt
- ¼ tsp black pepper
- ½ cup chopped fresh cilantro or parsley
- 2 oz queso fresco, crumbled
- ¼ cup toasted pepitas or sunflower seeds
Directions:
- Use a vegetable peeler to shave zucchini lengthwise into thin ribbons.
- Whisk together olive oil, lime zest, lime juice, garlic, salt, and pepper in a large bowl.
- Add zucchini ribbons, cilantro, and queso fresco. Toss gently until coated.
- Season with additional salt and pepper to taste.
- Sprinkle with toasted pepitas and serve immediately.

Kitchen Tip:
For the best flavour and texture, choose small, fresh zucchini with thin skins. Swap queso fresco for feta or shaved Parmesan, and use lemon instead of lime if desired.
