Fresh Fruit with Savory Sprinkles
Yield: 4 servings
Ingredients
1 1/2 lbs (680 grams) crunchy and/or fleshy fruit (melons, Asian pears, apples, oranges, pineapple or mango)
1 sheet toasted nori
1 tablespoon toasted sesame seeds
2 teaspoons mild chile flakes (such as Aleppo) or 1 tsp red pepper flakes
1/2 lemon
1 teaspoon flaky sea salt
Directions

Cut fruit into 1/2” wide wedges, rounds or however deemed fit for the fruit. Side aside.

Tear nori into small pieces. Pulse in a clean spice mill or blender until finely ground. Pour into a small bowl and mix with sesame seeds and chile flakes.

Using a microplane or zester, zest the half lemon and add to nori mixture. Combine with fingers so it doesn't clump. Stir in the salt.

Squeeze the lemon over the fruit, catching and discarding any seeds. Sprinkle the nori mixture over the fruit and serve.
