Sugar Sugar Sugar Cookies
Yield: Lots depending on which size of cookie cutter you use
Ingredients
1 cup salted butter
¼ cup icing sugar
¼ cup light brown sugar
¼ cup granulated sugar
1 teaspoon vanilla
1 egg, lightly beaten
2 ¼ cups flour
Directions
- In a small saucepan, melt the butter over low heat. Remove from heat and let cool 5 minutes.
- Preheat oven to 350 F.
- In a large bowl, add the 3 sugars, cooled melted butter and vanilla. Using a wooden spoon, mix until combined. Add the beaten egg and mix. Add the flour and mix until the ingredients clump together and you can no longer see the flour. Let the dough rest for 10 minutes.
- On a smooth, flat surface, lay down a sheet of parchment paper, roughly the size of a baking sheet. Divide cookie dough in half and place one half in the centre of the parchment paper. Lay another sheet, the same size, on top of the cookie dough.
- Using a rolling pin, roll on top of the parchment paper to flatten out the cookie dough. Roll out to ¼" thick. Remove top layer of parchment paper.
- Using a cookie cutter, cut out shapes, leaving a finger-width between each cookie. Using your hands, peel away the scraps of dough around the cookies. With the scraps, form cookie dough into a ball. Carefully transfer parchment paper with cookies to a baking sheet.
- Tear another piece of parchment paper and repeat steps 4-6 with remaining dough.
- Bake cookies, 1 baking sheet at a time, until golden, about 8-10 minutes. Place baking sheet on cooling rack and let cool completely before removing from baking sheet. Decorate as desired!
