Chef Joyce's Simple Tropical Smoothie Bowl with Peach Crumble
Yields: 1 Serving
Ingredients:
Smoothie:
- 1 cup frozen pineapple
- 1 small banana
- Juice of 1 lime
- 1 cup coconut milk from a carton
- 5-6 mint leaves
Peach crumble:
- 4-5 slices peach, thawed if frozen
- 1 tbsp coconut butter (also known as coconut manna- health food store) or can substitute peanut butter, cashew butter, almond butter or sunflower seed butter.
- 1/4 cup granola
Garnish:
- 1/4 cup blueberries or raspberries
- 1 tbsp hemp seeds
- Mint leaves, optional
Directions:

Smoothie: Blend all smoothie ingredients together in a blender until smooth. Pour into a bowl.

Peach crumble: in a small bowl, massage coconut butter through the granola.

Lay the peach slices over the smoothie

Distribute crumble evenly on top of smoothie

Garnish with berries hemp seeds and more mint leaves if desired.
